Parmesan Italian Red Fish

  • Enjoy this favorite dish of Zaca Mesa Club Member, Chas Drost, with his favorite Chardonnay, Zaca Mesa. 

    Ingredients

    • 2 cleaned red fish fillets
    • 4 tbsp of mayo 
    • 2 lemons, juiced
    • 2 tbsp of allspice
    • Parmesan cheese, grated
    • 2 tsp of garlic powder
    • 1 tbsp of green onions, finely chopped
    • 1 tomato, chopped

    Instructions

    • Heat oven to 350 degrees,
    • Coat each fillet with mayo & squeeze lemon juice on each side
    • Once coated, sprikle All-Spice over fillets
    • Layer grated Parmesan cheese until covered. 
    • Sprinkle garlic powder over cheese, then add chopped green onions & tomatoes
    • Place fillets into baking pan, scales side down & bake for approximately 20–25 min
    • Pour yourself a glass of Zaca Mesa Chardonnay for all the hard work & enjoy!
